Breakfast :

Fruit juices
Yoghurt
Fresh fruit
Bread, croissants, pastries
Butter, jam, honey
Homemade Muesli
Ham, cheese
Porridge, Eggs any style cooked to order
Traditional English or American cooked breakfast to order

Dinner is Table d'hôte (Host's Table, set menu).
A typical summer four-course dinner could be composed of choices from the following:


Appetizers/Starters :

Cold meats from the region
Salad of the Plateau
Goat Cheese and Leek Tart
Tomato and Basil Soup, hot or cold

Main courses :

Roast Lamb Provençale, rubbed in Herbes de Provence and garlic
Salmon Steaks on Celeriac, flavoured with Walnut Oil
Chicken Breast Poached in a Light Fennel Cream
Ratatouille (Vegetarian)

A selection of French Cheeses

Desserts :

Fresh Fruit, Fruit Salad or Fruit Tart
Locally made ice cream or sorbets from Beatrix in Vals
Chocolate soufflé
Combinations of the above …


A half bottle of wine per person, and Eau de Vals, one of our local mineral waters,
are included with dinner.

Special regional and country specific dinners also served.
